PINEAPPLE CAKE

BARB BAKER--NODROG PICNIC 2010

2 cups flour

2 cups sugar(I use 13/4 c)

2 t baking soda

2eggs,

1 whole can - 20 oz crushed pineapple                                                                                                                                                 

1 cup chopped walnuts or pecan

1 t vanilla

I add 1/4 cups ground flaxseed and 1/4 cup wheat germ

Bake in a 9x 13 greased pan for 40-45 mins.

(there is no oil/butter in the cake

Icing

1 stick butter and 8oz cream cheese softened and whipped.  Add 2  1/3 cups of conf sugar and 1 t vanilla.  Frost while warm
